Indian Recipe: Rice Bombay Biryani
If you like spicy, we can only say that this is an easy
recipe to cook and difficult to resist.
The Biryani is a dish of rice from Indian cuisine and
made from a mixture of spices, as well as basmati rice, meat / vegetables and
yogurt. There are many varieties of biryani and each type has its unique
characteristics. From Kashmir to Kanyakumari, from east to west of India there
are different varieties of this dish, usually have their roots in the
ingredients and uses of local cooks. It can be considered in all cases as a
dish made with pan, with the ingredients cooked together in the last stage of
preparation. There are mixtures of pre-processed species in India that are sold
commercially in supermarkets or shops, trying to reduce cooking times, But the
taste differs considerably from traditionally produced specimens.
In our case we will cook it in the Bombay style that seems to be the best known for
being the most spicy. Bombay Biryani is a popular Biryani style. Its origin is
set in Mumbai, India. The ingredients that characterize Bombay Biryani style
are meat, rice, salt, onion, ginger, garlic paste, yogurt, multiple spices
powder, spicy chili powder, cumin powder, cilantro, potatoes, green chili,
kewra and turmeric.
Ingredients for 10 people
• 500 gr of
chicken. Thigh, breasts ... (including bones).
• 500 g of
basmati rice. It should be washed and drained for 20 min.
• 5 medium
onions cut.
• 4
tomatoes, chopped
• 3
potatoes peeled and chopped
• 3
tablespoons of ginger
• 1 head of
peeled garlic
• 200 gr
yogurt or several natural yourts
• Oil.
• Turmeric.
• Multiple
spices cloves, cardamom, cinnamon, bay leaves,
coriander, mint leaves,
turmeric, chili, etc. How we find it difficult to make the right mix with all
the spices we recommend buying a premix of all these spices for this recipe.

Process
To begin, and as we have already mentioned in the
ingredients, proceed to clean the rice with water. Then let it drain for at
least 20 min.
We will begin to stir in a large saucepan and in olive oil 3
onions that we have previously chopped finely. Once the rice is tender, add the
rice and stir it a little along with the onion. Then we add double amount of
water to rice and make it boil. Then let the fire down but keep bubbling.
While the rice is cooked, we grind in a mixer 1 onion, 2
tomatoes and the head of garlic.
In another saucepan we began to stir the chopped chicken in
olive oil. We salpimentamos.
We remove the chicken and we suffer an onion, a tomato and
we add the previous crushed one. Add and fry the potatoes.
We add Bombay Biryani spice mixture, chicken and a glass of water.
We cook it over low heat until the chicken and the potatoes are done. We can
add more turmeric if we want to give it more color.
